Primo Estate Zamberlan Cabernet Sauvignon Sangiovese from McLaren Vale is a bold, Italian-inspired red that blends the power of Australian Cabernet with the bright acidity and rustic charm of Sangiovese. Named in honour of Primo Estate’s founder Joe Grilli’s grandfather, this wine is crafted using a unique twist on the traditional ripasso method — where the freshly fermented Sangiovese is passed over the skins of partially dried Cabernet Sauvignon, intensifying flavour and complexity. It’s rich, structured and unmistakably Primo: full of warmth, spice and southern Italian soul with Australian polish.
The Cabernet is partially dried in traditional Italian style to concentrate its character, while the Sangiovese is picked for freshness and lift. Co-fermentation and basket pressing bring everything together, followed by maturation in seasoned French and American oak for 18 months. The result is a full-bodied red with dark fruit, savoury edges and a long, textured finish.
In the glass, Zamberlan shows aromas of black cherry, cassis, dried herbs, cedar and tobacco leaf. The palate is plush and layered with ripe blackberry, dark chocolate, black olive and hints of spice, balanced by Sangiovese’s signature acidity and fine tannins. It finishes with savoury grip and lingering complexity.
Food pairing: ideal with osso buco, grilled lamb chops, beef lasagne, or roast eggplant with tomato and parmesan. Also great with aged pecorino or sharp cheddar.
Cellar potential: drinking beautifully now but will evolve over 8 to 12 years, gaining savoury richness and softening tannins.
