A plummy GSM blend that shows a wild edge of smoked and dried meats, blood plum, boysenberry and black cherry fruits, medina spice, pressed wildflowers, turned undergrowth, wood-derived spice and something musky in the background. Savoury with an earthen edge, pure black and blue fruits, powdery tannins and a sweep of maraschino cherry tang on the exit. Drink to 2035.

Rhubarb stem, hibiscus florals and some creeping ivy. The palate circles in on blood plum and morello cherry with that tell tale middle palate Mourvedure plumpness, iron and bloody meats as well. You will see all the single varieties here but it’s worth your time to think less and sip more. Enjoy the melted chocolate and dried boysenberry notes. This would also be drunk with a slight chill and served with wagyu bresola and good olives. Oak spice is subtle with some nutmeg and dried leaves. A crunchy, savoury wine with a whole gambit of fruit for timely mid-week meals.

GSM, sometimes GMS, occasionally SGM - a magical combination of letters any way you arrange them, with infinite variations when you add growers, winemakers and seasonal variations into the mix. In the right hands, they spell out: the ultimate crowd-pleaser.
This one opens with red-fruited aromas that mingle with earthy and musky notes sprinkled with dukkah and dried Mediterranean herbs. The palate is medium-bodied and silky, with generous red and black fruit flavours that walk a tightrope between savoury and sweet. Salty dark chocolate chips make an appearance, and freshness is retained by the fine and sandy tannins.
We want to pair the wine with succulence and aromatic spices. Try with duck red curry (Gaeng Ped Ped Yang) or roasted eggplant with pomegranate, tahini and crispy chickpeas tossed in paprika and cumin.

The Grower wines from Schwarz Wine Co. showcase blends of fruit from the vineyards of select Barossa growers. The 2023 season started in La Niña conditions, and the overall cooler temperatures required patience and precision from growers and winemakers alike. The best wines are classically styled, balanced and elegant.
This wine is a reflection of the vintage as well as the Schwarz family vineyards at Bethany. Old vine Grenache forms the spine here and 10% of it was fermented as whole bunches. Most of the wine matured in seasoned French oak, but a 37% component was kept in stainless steel for vibrant fruit. The components were blended in November 2024 and bottled in June 2025.
The final 2023 blend is vegan friendly, 56% Grenache, 40% Shiraz and 4% Mataro.
