An attractively layered nose features airy and cool notes of mint, quinine, lemon rind and brine flirts with a background application of oak. The more elegant middle weight flavors are akin to rolling a tiny pebble around the mouth while the balanced, clean and dry finale already possesses fine complexity and length. This is also very good and equally warmly recommended.

The Seguinot Bordet Fourchaume Chablis 1er Cru from Burgundy is a stunning expression of one of Chablis’ most revered Premier Cru vineyards. Crafted with precision and a deep respect for tradition, this wine embodies the purity and minerality that define Chablis.

The Seguinot Bordet family has been producing wine in Chablis since the 16th century, and their dedication to quality is evident in every bottle. Jean-François Bordet, the current winemaker, combines centuries-old knowledge with modern techniques to produce wines that are both classic and vibrant. The Fourchaume vineyard, with its prized Kimmeridgian limestone soils and sun-drenched slopes, provides the ideal conditions for crafting complex and elegant Chardonnay.

This Chablis opens with aromas of green apple, lemon zest, and white peach, intertwined with subtle floral notes and a hint of wet stone. A touch of almond and saline minerality adds depth and intrigue.

On the palate, it is medium-bodied with a beautiful tension between crisp acidity and creamy texture. Flavors of citrus, pear, and stone fruits are layered with chalky minerality and a touch of hazelnut. The finish is long and precise, leaving an impression of purity and finesse.

This wine is an excellent partner for pan-seared scallops, grilled white fish, or roast chicken with fresh herbs. It also complements dishes like crab linguine, sushi, or vegetarian risottos, offering versatility without relying on overused pairings. While approachable now, this Chablis has the structure to age gracefully for 8–10 years, developing even greater complexity.
