From the De Bortoli vineyard in Dixons Creek; 100% whole bunches, no new oak. Both the most convincing sangiovese I've tasted from Mayer and a superb example of Italy’s most planted variety. Floral with aromas of morello cherries, blackberries, bramble and potpourri. Sweetly fruited and very tasty before finishing with textbook sour-cherry, sappy tannins.

From the cool, elevated slopes of Bloody Hill comes a Sangiovese that captures both Italian spirit and Yarra Valley precision. Timo Mayer, the German born, minimal intervention vigneron with a fiercely loyal cult following, approaches this Tuscan variety with whole bunch fermentation, wild yeasts and a hands on vineyard philosophy. In the cooler climate of the Yarra Valley, Sangiovese retains vibrant acidity and aromatic lift, producing a wine that is savoury, structured and energetic rather than heavy. Made in small quantities and tightly allocated, it is another Mayer release that consistently sells out quickly.

Bright ruby in the glass with crimson highlights, the aromatics are lifted and distinctive. Sour cherry, red plum and cranberry sit alongside dried herbs, bay leaf and a hint of rose petal. Whole bunch inclusion brings a subtle spice and stem complexity, adding freshness and aromatic tension.

On the palate it is medium bodied, lively and finely structured. Red fruit drives the core, framed by firm yet polished tannins and bright natural acidity. Notes of tomato leaf, tobacco and cracked spice weave through the mid palate, while a mineral thread carries to a long, dry and savoury finish. It is Sangiovese with cool climate clarity and unmistakable Mayer energy.

Pair with wood fired pizza, pappardelle with ragù, grilled lamb or eggplant parmigiana. Delicious in its youth for its vibrancy and lift, it will cellar comfortably for eight to twelve years, developing earthy complexity and greater textural harmony.
