The domaine’s holdings cover 38 ha, and the various cuvées have just been blended, and will stay on lees through to December. Pale lemon yellow. An entrancing bouquet, on the sunnier side but with a mineral undercurrent. Sherbet on the palate along with citrus, good concentration, and an evenly balanced finish. Drink from 2025-2028. Sourced from a mosaic of exposures and elevations and incorporating old vines planted between 1969 and 1972, the 2023 Chablis Village offers aromas of pear, white flowers and freshly baked bread. Medium- to full-bodied, ample and charming, it is underpinned by ripe yet racy acidity and concludes with a long, saline finish. Harvested earlier to preserve freshness, this is a well-executed village-level Chablis.

From the cool northern edge of Burgundy, Chablis delivers one of the purest expressions of Chardonnay in the world. Domaine William Fèvre has long been one of the great names of the region, established in 1959 and now holding one of the largest collections of Premier Cru and Grand Cru vineyards in Chablis. The estate is guided by winemaker Didier Séguier, whose philosophy centres on expressing the character of the region’s famous Kimmeridgian limestone soils while preserving freshness and precision. Even the village Chablis reflects this careful approach, sourced from vineyards surrounding the town where ancient marine fossils and chalky soils give the wine its distinctive mineral drive.

The wine shows a pale straw colour with green highlights. Aromas are fresh and lifted with lemon zest, green apple and white peach supported by delicate white flowers and a subtle flinty minerality. With air a hint of almond and oyster shell adds further complexity. The palate is crisp and beautifully balanced, carrying flavours of citrus and orchard fruit framed by bright acidity and a clean mineral backbone. The finish is refreshing and precise with a gentle saline note that makes Chablis so irresistible at the table. It is perfect alongside oysters, fresh prawns, grilled fish, sushi or light seafood dishes and will continue to drink beautifully over the next five to eight years.
