From one of Chablis’ most respected Premier Cru vineyards on the left bank, William Fèvre Montmains delivers a beautifully structured, mineral driven expression of Chardonnay. Domaine William Fèvre has been a benchmark in Chablis for decades, known for meticulous vineyard work and a focus on preserving the purity of Kimmeridgian limestone soils. Montmains, with its cooler exposition, produces wines of tension, precision and remarkable ageing potential.
A pale lemon colour with bright green flashes shimmers in the glass. Aromas unfold with lemon zest, green apple and white peach layered with oyster shell, chalk and a subtle flinty edge. There is an immediate sense of clarity and focus.
The palate is dry and finely structured, delivering citrus and orchard fruit flavours framed by vibrant acidity and a firm mineral backbone. Notes of grapefruit pith, saline freshness and gentle almond nuance build through the mid palate, leading to a long, precise finish that feels both energetic and tightly wound. This Premier Cru will reward cellaring over ten to fifteen years, developing greater depth, toast and complex mineral character.
Fresh oysters, delicate sashimi or tempura prawns with a light soy dip all sit perfectly alongside. A late evening pairing of Bach’s Brandenburg Concertos or something equally structured and bright, the wine carrying that same sense of precision, balance and timeless appeal.
