Sourced from a sunny, precocious site that is typically among the first to be harvested, the 2023 Chablis 1er Cru Vaillons delivers aromas of beeswax, orange oil, pear and honeysuckle. Full-bodied, enveloping and charming, it is underpinned by ripe yet vibrant acidity and concludes with a saline finish, reflecting the personality of the warm vintage. The wine is derived from 3.5 hectares, the majority of which lies within Vaillons proper.

Overall a yield of 12hl/ha, though with differences: 30 hl/ha in Mélinots, but the other end of the valley was badly hailed. A little more flesh alongside the classical style. Vaillons lies on the cooler left bank of the Serein River and is one of the most historic and respected Premier Cru vineyards in Chablis. The site is divided into several small climats that together produce wines known for their elegance, freshness and finely etched mineral character. Domaine William Fèvre, founded in 1959, is one of the most influential producers in the region and holds outstanding vineyard parcels across Chablis including many Premier Cru and Grand Cru sites. Under the guidance of winemaker Didier Séguier the estate focuses on sustainable vineyard practices and gentle winemaking that highlights the purity of Chardonnay and the distinctive character of the region’s Kimmeridgian limestone soils.
The wine shows a pale gold colour with bright green reflections. Aromas are lifted and precise with lemon zest, green apple and white peach supported by delicate white flowers, flint and a subtle oyster shell minerality. With time in the glass hints of almond and light brioche begin to appear, adding depth while preserving the wine’s freshness. The palate is vibrant and beautifully balanced, carrying flavours of citrus and crisp orchard fruit framed by bright acidity and chalky mineral tension. Vaillons is known for its graceful structure and clean precision, finishing long and saline with classic Chablis purity. It will continue to develop over the next ten to fifteen years and pairs beautifully with oysters, grilled scallops, crab, lobster or delicate seafood dishes.
