On the left bank of the Serein River, Beauroy is one of the earliest ripening Premier Cru vineyards in Chablis, known for producing wines with generosity and charm while still retaining the region’s signature mineral edge. Domaine William Fèvre has been one of the leading names in Chablis since the estate was founded in 1959, building an extraordinary collection of Premier Cru and Grand Cru vineyards across the appellation. Under the direction of winemaker Didier Séguier, the domaine focuses on sustainable vineyard practices and careful cellar work that allows each site to express its individual character. Beauroy’s Kimmeridgian limestone soils, rich in fossilised marine sediments, give the wine both freshness and an underlying chalky structure.
The wine shows a bright pale gold colour with flashes of green. Aromas open with lemon peel, green apple and white peach layered with delicate white flowers, flint and a subtle saline note. As it breathes, gentle hints of hazelnut and brioche add depth without overshadowing the purity of the fruit. The palate is lively and beautifully balanced with crisp acidity carrying flavours of citrus, orchard fruit and chalky minerality across a supple texture.
The finish is clean, fresh and persistent with a subtle coastal salinity that reflects Chablis’ ancient seabed soils. It will drink beautifully over the next eight to twelve years and pairs effortlessly with oysters, grilled prawns, crab, fresh seafood platters or delicate fish dishes.
