Sourced from the upper part of the climat and planted with 40- to 60-year-old vines, the 2023 Chablis 1er Cru Vaulorent wafts from the glass with a deep bouquet of lemon oil, white flowers, orange peel, peach, pear and a delicate reductive signature. Medium- to full-bodied, concentrated and layered, it is framed by ample, chalky structuring extract and racy acidity, concluding with a persistent, saline finish. This is a terrific performer once again.

Pale but glowing, a note of citron confit, an additional depth compared to the Fourchaume. More flesh but perfectly proportioned, fine and elegant, and very long indeed. This should be first class. Just beside the Grand Cru slope of Les Preuses lies Vaulorent, one of the most prized Premier Cru vineyards in Chablis. Its position on the same hillside and the same Kimmeridgian limestone soils gives the wines a depth and mineral intensity that often rivals the Grand Crus themselves. Domaine William Fèvre has long been one of the most respected producers in Chablis, founded in 1959 and now stewarding an exceptional collection of vineyard holdings across the region. Under the guidance of winemaker Didier Séguier, the estate focuses on expressing the character of each site through careful vineyard work and restrained cellar practices, allowing the purity of Chardonnay and the voice of the terroir to take centre stage.
The wine shows a pale gold colour with brilliant clarity. Aromas are lifted and precise with lemon zest, green apple and white peach layered with white flowers, flint and a hint of oyster shell. With time in the glass subtle notes of almond, brioche and gentle spice begin to emerge. The palate is vibrant and finely structured, carrying flavours of citrus, crisp orchard fruit and striking mineral tension drawn from the limestone rich soils. There is both energy and depth here, with a long saline finish that leaves a lingering impression of purity.
This Premier Cru will evolve beautifully over the next ten to fifteen years and pairs wonderfully with oysters, grilled scallops, lobster, fresh crab or delicate seafood dishes that mirror its freshness and mineral drive.
