Alain et Cyril Gautheron Chablis is a bright, finely etched and mineral driven expression drawn from the limestone rich hillsides around Fleys, a village that has become a quiet stronghold for classic Chablis. The Gautheron family has been tending these vineyards for generations, farming with care to protect purity and vineyard expression. The vines thrive in Kimmeridgian marl studded with ancient oyster fossils, giving the wine its trademark saline tension and chalky finesse. Fermentation and ageing take place entirely in stainless steel to lock in freshness and keep the spotlight firmly on fruit and terroir.
Aromas of lemon zest, green apple and white peach rise delicately, supported by grapefruit pith, fresh florals and a subtle almond note from time on lees. There is a cooling sea spray character and a clear sense of crushed rock, a whisper of the stone beneath the vines. As it breathes, nuances of jasmine, fennel frond and flint add extra clarity and charm.
The palate is sleek and refreshing with a beautiful thread of acidity that drives the fruit gracefully across the tongue. Citrus, apple and pear skin flavours unfold with pristine definition, evolving into chalk dust and wet stone through the finish. Balance is key here: lively and zesty, yet softly textured from lees contact, with a clean, mouthwatering close that lingers on mineral purity. It drinks brilliantly now for vibrancy but will develop more savoury complexity over the next three to five years.
Fresh oysters, prawns, sushi, goat cheese crostini, lemon roast chicken and summer greens are its natural companions, or simply enjoy it as a crisp aperitif on a warm evening. A wonderful example of Chablis that feels both authentic and effortlessly drinkable.
