A little cloudy, wonderfully lively and full of personality, Sui Lieviti celebrates Prosecco's traditional way of making sparkling wine. Founded by siblings Elena and Enrico Moschetta, BiancaVigna specialises in the steep hills of Conegliano Valdobbiadene, where Glera thrives in mineral rich soils. The name means 'on the lees', referring to the second fermentation in bottle, with the yeast sediment left in place rather than removed.
Pale straw yellow with a gentle haze and lively, delicate bubbles. Crisp green apple, lemon zest and fresh pear mingle with white flowers, bread dough and a hint of almond. Bone dry and wonderfully refreshing, with bright acidity, a subtle yeasty texture and a savoury, slightly saline finish.
Terrific with Venetian salt cod crostini, crispy calamari with lemon, or zucchini fritters with fresh herbs. A deliciously relaxed sparkling wine for long lunches and good company.
Cellaring: Drink now to 2028. Best enjoyed for its lively freshness, although short term ageing may develop additional savoury character.
