Bremerton Batonnage Chardonnay from Langhorne Creek is a rich, textural white that confidently wears its winemaking on its sleeve. The name “Batonnage” refers to the French technique of stirring the lees during barrel ageing, a process that builds creaminess, enhances complexity and gives the wine a luxurious mouthfeel. It’s a nod to old-world tradition, delivered with Bremerton’s South Australian precision.
Grown on the Willson family’s estate vineyards, the Chardonnay is handpicked and whole-bunch pressed before being fermented and matured in French oak barrels. Regular lees stirring adds texture and weight, while the cooler climate of Langhorne Creek helps maintain line and acidity, balancing richness with freshness.
In the glass, it opens with aromas of white peach, toasted almond, lemon curd and subtle oak spice. The palate is full and creamy, but with a spine of citrus zest and saline minerality that keeps it tight and energetic. It finishes long, layered and satisfyingly savoury.
Perfect with grilled lobster, roast chicken with tarragon butter, or a creamy cauliflower gratin.
