Low yields, hand harvesting and gentle handling in the cellar allow the vineyard character to shine, with fermentation and ageing carried out primarily in stainless steel to preserve clarity and freshness.
The aromatics are quietly complex and refined. Ripe pear, yellow apple and white peach sit at the core, lifted by lemon zest and hints of chamomile and almond blossom. Beneath the fruit lies a savoury undertone of wet stone, crushed volcanic rock and a faint herbal note that adds intrigue rather than greenness. As the wine opens, subtle notes of fennel, citrus oil and a touch of beeswax emerge, giving the bouquet depth and poise.
The palate is beautifully balanced, offering both texture and precision.
