The domaine’s vineyards sit on limestone rich soils flecked with blue marl, a rare geological formation that gives the wines extraordinary texture and mineral depth. At Pibarnon, Mourvèdre is king, and the rosé is built around it, with a supporting cast of Cinsault. The result is a rosé of remarkable stature, precision and subtle power, capable of cellaring for years.
The estate farms organically with low yields, all by hand, and harvests are timed with surgical care to preserve brightness while capturing Mourvèdre’s perfume and gravitas. Whole bunch pressing is key to its refinement. Fermentation is cool and slow to protect delicacy, then the wine rests on fine lees to develop quiet complexity and silky texture. Pibarnon sits at the intersection of tradition and ambition, producing rosé with a sense of place few estates can match.
The nose shows layers of wild strawberry, blood orange and white peach, joined by nectarine skin, rosewater, jasmine and crushed herbs. Beneath the fruit lies a deep mineral seam, with hints of sea spray, chalk dust and warm stone. As the wine stretches out in the glass, notes of tangerine, spice and almond emerge, revealing increasing detail.
On the palate the wine is sculpted and expressive. Juicy red berries and citrus intertwine with fine, savoury tannins from Mourvèdre, giving shape and presence. Flavours of strawberry, grapefruit zest, peach and pomegranate are guided by bright acidity and a subtle salt edged minerality. The texture is plush yet lifted, the finish long, pure and quietly structured. With three to five years of cellaring, deeper notes of honeycomb, herbs and dried citrus peel will unfold.
This is a rosé made for the table. Ideal with grilled prawns, bouillabaisse, tuna niçoise, chargrilled octopus, Provençal vegetables, roast chicken, saffron seafood rice or soft cheeses. It is equally compelling as a luxurious aperitif.
