Daniel Dampt et Fils works out of Milly in the heart of Chablis, a family estate now run across generations with a clear focus on purity and regional character. Even at the Petit Chablis level, the same attention in the vineyard and cellar comes through, with fruit grown on the higher, cooler plateau sites where Portlandian limestone gives a slightly more open, approachable style.
The aromatics are bright and immediate, lemon and lime zest with green apple and a hint of white peach. There is a clean, chalky edge that runs underneath, along with a faint floral lift that keeps things lively.
On the palate it is crisp and refreshing, light to medium in body with zippy acidity driving the wine. Citrus and orchard fruit flavours stay clean and focused, finishing dry with a subtle mineral note and a gentle saline touch that adds interest.
Winemaking is kept simple and precise, stainless steel preserving freshness and allowing the fruit and site to show clearly without oak influence.
This is a perfect match for lighter dishes. Fresh oysters, prawns, or a simple fish and chips with lemon all work beautifully. It also pairs well with salads, goat’s cheese or anything that calls for a clean, refreshing white.
