The Domaine Jean Collet Chablis Organic is a benchmark expression of classic Chablis, combining clarity, minerality and elegance with the purity that comes from organic viticulture. Founded in 1952 and now led by Romain Collet, the domaine has steadily transitioned to organics across its holdings, crafting wines that reflect both tradition and the modern pursuit of terroir transparency.
The fruit comes from estate vineyards rooted in Chablis’ famous Kimmeridgian limestone soils, packed with fossilised seashells. These soils, along with the region’s cool climate, give the wine its hallmark combination of freshness, chalky minerality and saline drive. Grapes are hand-harvested and vinified in stainless steel to preserve precision, with a portion matured in neutral oak to add texture and complexity. Lees ageing further enhances body and depth without obscuring the crisp mineral line.
In the glass it is pale gold with green glints. Aromatically, it offers lemon zest, green apple and pear layered with white flowers, oyster shell and a subtle flinty edge. On the palate it is medium-bodied and vibrant, showing citrus and orchard fruits supported by racy acidity. A touch of lees creaminess adds roundness, leading to a long, saline finish that is both elegant and refreshing.
Food pairings suit its mineral freshness: oysters, grilled prawns, sole meunière, or vegetarian dishes like asparagus risotto, zucchini fritters or goat’s cheese tart. While immediately appealing, it will develop additional layers of honey, hazelnut and truffle with 5 to 7 years of careful cellaring.
