After gentle pressing, the juice is cold fermented in stainless steel to preserve freshness, with short lees contact to add a touch of roundness.
The nose opens with white peach, citrus blossom, lemon zest and a hint of sea spray. The palate is crisp and lively, with flavours of mandarin, green melon, almond and a mineral edge. There’s a touch of salinity and a clean, dry finish that makes this wine especially versatile at the table.
Food pairing: ideal with grilled fish, caponata, seafood risotto, herbed chicken or fresh cheeses. Also excellent with pasta alla Norma or Sicilian street food like arancini.
