Hay Shed Hill was established in 1973 in the heart of Wilyabrup, one of Margaret River’s original vineyards and a cornerstone of the region’s early development. Today the estate is owned and run by the Miles family, with winemaker Michael Kerrigan shaping a portfolio that blends heritage with modern precision. The Block 1 Semillon Sauvignon Blanc draws fruit from the estate’s original plantings, reflecting the coastal influence and gravelly loam soils that have made this subregion a benchmark for the classic white blend.
Semillon provides structure and subtle texture, while Sauvignon Blanc delivers aromatic lift and brightness. Fruit is harvested in the cool of morning to preserve freshness, and fermentation in stainless steel retains clarity and vibrancy. Careful blending ensures balance between citrus drive and tropical nuance, creating a style that is lively yet composed.
Pale straw in colour, the aromas open with passionfruit, lime and green apple layered with fresh herbs and a hint of citrus blossom. The palate is light to medium bodied and crisp, with vibrant tropical and citrus fruit carried by bright acidity. A gentle textural note from the Semillon supports a clean, refreshing finish.
It pairs beautifully with seafood, salads, goat cheese and lightly spiced dishes. Best enjoyed in its youth for vibrancy and lift, it will hold comfortably for three to five years.
