2024 Holyman Chardonnay, Tamar Valley

The Holyman Chardonnay from Tasmania’s Tamar Valley is a benchmark cool-climate white, crafted by Joe and Lou Holyman at their Stoney Rise vineyard. While Holyman is often associated with Pinot Noir, their Chardonnay has earned equal respect for its precision, texture and age-worthiness. Joe Holyman, a passionate and uncompromising winemaker, has built a reputation for producing wines that balance fruit purity with savoury depth, and this Chardonnay is a prime example.

The Tamar Valley’s maritime climate, influenced by the Bass Strait, provides mild summers and long ripening seasons that are perfect for Chardonnay. Estate vines are planted on volcanic soils that add mineral drive and intensity to the fruit. In the winery, winemaking is deliberately restrained and thoughtful: whole-bunch pressing, wild yeast fermentation, ageing in French oak (a portion new), and extended time on lees. These techniques build complexity and texture while allowing the vineyard’s character to shine.

In the glass, the wine is pale gold with green reflections. Aromas are lifted and complex, with white peach, lemon curd and grapefruit zest layered over flint, cashew and subtle struck match. The palate is taut yet textural, with stone fruit and citrus at its core, supported by creamy lees notes, fine acidity and a chalky mineral backbone. The finish is long, elegant and savoury, making it both immediately engaging and built to reward patience.

Food pairings highlight its balance of richness and precision: roast chicken with lemon and thyme, pan-seared scallops, wild mushroom risotto or vegetarian dishes like pumpkin ravioli with sage butter. It also pairs beautifully with creamy or nutty cheeses. With 8 to 12 years of cellaring potential, Holyman Chardonnay develops layers of honey, hazelnut and truffle while maintaining freshness and drive.
