Elegant, zesty and crunchy Chardonnay sparkling from Margaret River
The perfect aperitif style, this sparkling pours with an energetic bead and mousse, and opens with flinty notes that expand to saline aromas of yellow fruit, vibrant citrus and almond pastries. Zesty citrus leads on the crunchy and savoury palate held together by a taut acidity and chalky tension.
Lift any occasion by opening a bottle and enjoy with lighter style of finger food, fresh oysters or green vegetable tempura.
More about this wine
A 100% Chardonnay, 15% of the base for this sparkling wine was fermented in well-seasoned French oak barrels, while the majority of the blend utilised stainless steel. The wine then spent 21 months in bottles for secondary fermentation and maturing on lees and was finished with a 5.25g/L dosage at disgorgement.
Highly enjoyable on release, the wine could be kept for 2-3 years under good conditions, developing a rounder character as it ages.

Idée Fixe [ed. a fixed idea, or obsession] is a Margaret River producer of premium bottle fermented sparkling wines established in 2018 by the Holmes à Court family who also own Vasse Felix.
The fruit for the wines is sourced from a dedicated 29-hectare organic estate vineyard in the cool, southern Karridale area of Margaret River, with viticulture in the hands of a team lead by Bart Molony. The winery is located at the southern end of the town of Margaret River, with cellar work under directions from Mick Langridge.
The house style emphasises purity and intensity of fruit, with production focusing on the Blanc de Blancs style.
