Nova Vita was established by Robert and Clare Francis in the Adelaide Hills with a vision of creating wines that reflect both the region's exceptional vineyards and a spirit of innovation. The Firebird range represents the winery's more adventurous side, taking its name from the mythical bird that symbolises renewal and transformation. Drawing fruit from the cool slopes of the Adelaide Hills, the wines consistently showcase purity, freshness and a strong sense of place.
Pinot Gris has found a natural home in the Adelaide Hills, where cool nights and a long growing season allow flavours to develop gradually while preserving bright natural acidity. The 2024 vintage delivered excellent fruit quality, with careful vineyard management and gentle winemaking producing a wine that captures both the aromatic charm and textural appeal of the variety. A small amount of lees contact adds richness without sacrificing freshness.
Pale straw with a subtle blush tint, the wine opens with aromas of nashi pear, white peach and apple blossom, complemented by hints of ginger, citrus peel and spice. The palate is generous yet beautifully balanced, offering flavours of ripe pear, stone fruits and lemon zest wrapped in a silky texture. A lively acid line keeps everything fresh and focused, while the finish carries lingering notes of pear skin, spice and minerality.
Enjoy with grilled South Australian squid, pork and fennel sausages, Vietnamese chicken salad, mushroom and thyme tart or a roasted pumpkin risotto. Drinking beautifully in its youth, it will continue to provide pleasure over the next three to four years. Fresh, versatile and packed with Adelaide Hills character, this is a Pinot Gris that comfortably punches above its weight.
