Flamboyantly floral on the nose with notes of dried rose petal, Turkish delight, confectionary banana, and lychee. Underlying tones of cardamom and white pepper spice on the palate with plenty of texture and a bone dry finish.Fruit was sourced from 20-year-old vines on the East Coast of Tasmania. The fruit was crushed and pressed to tank. Cold settled. Racked off heavy lees then warmed and inoculated (PDM yeast strain). Fermentation took place over 18 days with 3 months on fine lees in stainless steel tanks prior to bottling.
