The Rosily Sauvignon Blanc Organic from Margaret River is a vibrant, expressive white that captures the purity and freshness of this coastal region. Rosily Vineyard, a boutique producer named after the French explorer Count François de Rosily, has quietly built a reputation for meticulous, small-scale winemaking with a strong focus on organics. All fruit is estate-grown and certified organic, ensuring a wine that is both sustainable and true to place.
Margaret River’s maritime climate, with its cooling sea breezes and long growing season, is ideal for Sauvignon Blanc. The organically farmed vines sit on gravelly loam soils over clay, which provide both minerality and concentration. Minimal intervention in the winery preserves varietal character and allows the vineyard to shine.
In the glass it is pale straw with green glints. The bouquet is lifted and aromatic, showing passionfruit, gooseberry and ripe citrus layered with fresh herbs, jasmine and a saline edge. The palate is crisp and lively, with juicy tropical and citrus fruits carried by bright acidity and a fine mineral line. A subtle textural element adds depth, while the finish is clean, long and refreshing.
Food pairings highlight its zesty energy: freshly shucked oysters, grilled prawns with lime, Thai green papaya salad, or vegetarian dishes like asparagus with lemon butter. It also pairs beautifully with chèvre or feta. Best enjoyed young for vibrancy, though it will hold well for 3 to 4 years, developing a softer, honeyed note with time.
