Here a more restrained nose is compositionally similar to the straight Chablis with perhaps just a smidgeon more wood influence in evidence. The super-sleek, delicious and intense medium- bodied flavors possess more volume and mid- palate density while exhibiting fine length on the balanced, clean and attractively dry finale. This too could use better depth so again a few years of keeping should prove beneficial.

The Seguinot Bordet Chablis from Burgundy is a quintessential expression of the region, offering elegance, freshness, and a striking mineral character. Produced by one of Chablis’ most historic winemaking families, this wine beautifully captures the purity and vibrancy for which the area is celebrated.
The Seguinot Bordet family’s winemaking heritage dates back to the 16th century. Jean-François Bordet, the current winemaker, brings both tradition and innovation to the cellar, crafting wines that highlight the unique Kimmeridgian limestone soils of Chablis. His commitment to sustainable viticulture and precise winemaking ensures a pure and terroir-driven Chardonnay.
On the nose, this wine offers aromas of green apple, lemon zest, and white peach, complemented by hints of citrus blossom and wet stone. Subtle saline and flinty notes add a layer of complexity to its aromatic profile.
The palate is bright and refreshing, with crisp acidity and a clean, mineral-driven finish. Flavors of lime, pear, and grapefruit are supported by a subtle creaminess from time spent on fine lees. The balance between fruit, texture, and minerality makes this Chablis both approachable and refined.
This wine is an ideal match for fresh oysters, grilled fish, or dishes like lemon-roasted chicken or prawn linguine. Its crisp, clean profile also complements sushi, vegetarian tartlets, or soft goat cheese. While enjoyable now, it has the potential to age gracefully for 3–5 years, enhancing its depth and complexity.
