Fourchaume is one of Chablis’ most recognisable Premier Cru sites, sitting on the right bank with prized exposures that deliver both ripeness and that classic mineral drive. Seguinot Bordet is a long established family house, now several generations deep, known for a traditional, no fuss approach that lets their vineyard holdings speak clearly. This is very much classic Chablis, shaped by Kimmeridgian limestone and a cool northern climate.
The aromatics carry both generosity and precision. Lemon curd and ripe green apple lead, followed by white peach and a subtle citrus blossom lift. There is a deeper mineral layer underneath, oyster shell and wet stone, along with a faint hint of almond and spice from careful handling.
On the palate it has more weight and depth than village Chablis, medium bodied with a rounded mid palate balanced by a firm line of acidity. Flavours move from citrus and orchard fruit into a more savoury space, with a saline edge and a touch of flint carrying through a long, detailed finish. It feels structured yet open, a hallmark of Fourchaume’s sunnier exposures.
Winemaking is traditional and restrained, often with a portion of oak or time in older barrels to build texture, but always in balance so the vineyard character remains front and centre.
This is a natural match for seafood with a bit more richness. Lobster, scallops or grilled fish with butter sauces all work beautifully, and it also pairs well with roast chicken or creamy poultry dishes where the acidity can cut through.
It will drink well now with a little air, but five to ten years in the cellar will bring more complexity, with nutty, honeyed and savoury notes emerging while the mineral core stays intact.
