Taylors Jaraman Pinot Noir is a cool-climate blend that brings together the vibrancy of Tasmania and the elegance of the Adelaide Hills, creating a finely balanced red with purity, perfume and structure. This wine is part of Taylors’ Jaraman range, which focuses on showcasing regional synergy — in this case, two of Australia's best sites for Pinot Noir, blended to highlight both aromatic lift and textural finesse.
Tasmanian fruit contributes bright red fruit, high-toned aromatics and natural acidity, while the Adelaide Hills component adds flesh, spice and a silky palate feel. Grapes are fermented in small open fermenters with gentle plunging to extract colour and tannin, followed by ageing in French oak, mostly older, to build complexity without overshadowing the fruit.
The nose is fragrant with wild strawberry, raspberry, red cherry, forest floor and subtle spice. On the palate, it is medium bodied with soft tannins, showing layers of red fruit, dried herbs, clove and a touch of cedar. There’s a fine acid line and a savoury finish, making it both easy to enjoy now and interesting enough to hold.
Food pairing: excellent with duck breast, mushroom risotto, grilled salmon, or roast chicken with thyme. Also great with charcuterie, soft cheeses or lentil-based dishes.
Cellar potential: best enjoyed within 5 to 7 years, though it can age gracefully into a more savoury, earthy style.
