The fruit is hand harvested at optimal ripeness, with Sauvignon Blanc providing lifted aromatics and drive, while Semillon adds structure, palate weight and ageability. Winemaker Tim Shand treats the components with care—some parcels undergo wild fermentation in French oak for complexity and depth, while others are kept in stainless steel for freshness.
