The Pedestal range of wines from Larry Cherubino are intended to be aromatic and vibrant, eschewing notable oak character for pure fruit expression.
The 2025 season in Margaret River was warm and dry, with Chardonnay fairing particularly well. The grapes for this wine were machine-harvested during the cooler morning hours and destemmed, with whole berries pressed for free-run-juice. The juice settled overnight in stainless steel before going into oak for fermentation with a combination of select neutral as well as indigenous yeasts. A small component of the wine was allowed to go through malolactic conversion ahead of bottling leading into Christmas.
