Biodynamic skin-contact Sauvignon with dense and savoury flavours of citrus, amaro & orchard fruit
Vibrant and complex natural wine that pours in a shade of deep golden amber and greets with floral citrus and amaro notes before revealing sweet aromas of yellow orchard fruit and warm Mediterranean herbs. The palate is dense and savoury, continuing the citrus and herb theme of the nose, with amaro notes coming back on the rather silky finish.
The energy here is late summer and early autumn, something that pairs well to roast chickens with herb and garlic jus, pumpkin risotto and washed rind cheese. Would also pair well with East Asian dishes with fermented ingredients and flavours if you keep chilli and like heat moderate.
More about this wine
The 2025 Amber was made from biodynamically grown fruit from the Cullen Vineyard and includes a 10% Semillon component. The fruit was handpicked in February over two days a couple of weeks apart, crushed to open stainless steel fermenters and fermented on skins to build colour and texture. The pressed wine was matured for eight months in oak barrels of which 27% were new.
