Textural and juicy strawberries, rosella jam, crunchy apples and mandarin
Dancing in the Moonlight Rosé is a blend of all red varieties grown in Cullen’s Wilyabrup vineyards and made with the saignée method [ed. bleeding, whereby crushed grapes are given a brief contact with skins before the juice is drained off for fermentation, often resulting in a slightly darker colour than what is currently the pale ‘norm’ for rosé wines]. From the warm 2025 season, the wine was fermented with indigenous yeasts in stainless steel and bottled early.
This pours with a light pink colour and opens with floral aromas of strawberries, cream, rosella, crunchy red apples and mandarins. The juicy palate is filled to the brim with flavour that spill on form the nose, with textural roundness and light grip extending the fruit on the long and complex finish.
Very pleasant on its own, the wine really shines with food, handling warm eastern Mediterranean spices and salads with ease. Try with grilled pork chops, duck legs and halloumi and pass around roast seasonal vegetables with generous amounts of za’atar and sumac.
