This wine hails from the temperate 2025 season, with Margaret River enjoying a generous harvest across all varieties. For the Discovery Chardonnay, the winemaking team aims to keep winemaking inputs minimal to capture aromatic purity and elegance of the fruit sourced from the southern reaches of Margaret River. Fermentation took place in French oak barrels, but these were well-seasoned and neutral in character, and the wine then rested a further seven months on lees without stirring.
Domaine Naturaliste does Chardonnay very well and in a range of styles. This is the one to have on hand as a great all-rounder. It’s fresh, delicate and aromatic, drinks well on release but doesn’t mind a couple of years in the bottle, either. You could serve it as an aperitif, with grilled flathead or perhaps to some lightly dressed fresh pasta.
