60% Grenache, 25% Cinsault, 7% Mourvèdre, 4% Syrah, 4% Rolle sourced primarily (c 80% of the fruit) from two Domaines Ott estates: Château de Selle and Clos Mireille; remainder bought in. Whole-bunch pressing and a very brief maceration, then slow fermentation in thermoregulated stainless-steel tanks. Winemaker Jean-François Ott. TA 3.48, pH 3.24, RS 0.3 g/l. Available in up to 200 shops. Organic and biodynamic.
In contrast to the Queen version, I’d happily shell out 50% more for this real example of rosé royalty. Doesn’t show the simple upfront, floral, strawberry fruit of many a Provence pink but instead is defined by a distinctly serious, almost savoury, undertow. Mineral notes add interest to the long finish. Has potential to age.

Few estates are more closely associated with the beautiful rosés of Provence than Domaines Ott. Founded by Marcel Ott in 1912, the family established a reputation for wines of elegance and exceptional quality. BY.OTT captures that heritage in a fresh, contemporary style, making it a particularly appealing introduction to one of Provence's most celebrated names.
The 2025 BY.OTT is sourced from selected vineyards across the Côtes de Provence, with Grenache providing the foundation of the blend, supported by Cinsault, Syrah and Mourvèdre. Gentle pressing and careful temperature control preserve the fruit's delicate fragrance, while the Mediterranean climate contributes ripe flavours balanced by refreshing acidity.
Pale salmon pink with a delicate peach hue. Wild strawberry, white nectarine and pink grapefruit mingle with orange blossom and a hint of fresh herbs. The palate is silky and beautifully refreshing, with juicy red berries, citrus zest and a subtle savoury edge. A clean, dry finish leaves lingering peach and a gentle saline note.
Delicious with grilled calamari and salsa verde, a Moroccan carrot and chickpea salad or crispy zucchini flowers filled with ricotta and lemon. Equally appealing with fresh prawns and a little homemade aioli.
Cellaring: Drink now to 2028. Enjoy for its youthful fragrance, delicate fruit and lively freshness.
