From the warm days and ancient red Cambrian soils of Heathcote, this Fiano shows a richer, more textural Australian expression of a classic southern Italian variety. Jasper Hill is a pioneer of organic and biodynamic farming in the region, with a deep commitment to minimal intervention and site expression. Lo Stesso Fiano is grown on the same iron rich soils that have made Heathcote famous for powerful reds, yet here they bring depth, savoury complexity and natural weight to a white variety that thrives in warmth while retaining freshness. The result is a wine that feels generous and Mediterranean in spirit, but still distinctly Heathcote in structure and intensity.
The vineyard setting plays a big role in the wine’s personality. Hot daytime temperatures build flavour and ripeness, while cooler nights help preserve acidity and aromatic lift. Jasper Hill’s hands off approach in the winery allows natural texture and varietal character to shine, with gentle handling to retain phenolic grip and savoury detail. Rather than a simple, fruit driven white, this is a serious, food focused wine built around mouthfeel, balance and sense of place.
In the glass it shows a medium straw to light gold colour. Aromas are layered and complex, opening with pear, baked apple and yellow peach, followed by honey, chamomile, almond meal and a subtle herbal note.
