Structured, toasty and full-bodied single vineyard Chardonnay with zippy acidity
The grapes for this wine hail from a north facing Lobethal vineyard at 480 metres elevation on quartz and nic shist over weathered sandstone. The hand-harvested fruit was whole-bunch pressed and fermented in a mixture of new and seasoned French oak barriques and puncheons before being left to age on lees for 18 months.
Somewhat more Barossa than Adelaide Hills in its approach, this wine is less about the more common, pristine Hills style, the result being a structured and full-bodied Chardonnay with toasty lees characters and zippy acidity.
Ideal with salty, caramelized or collagen-rich cushions to absorb the wine's richness while letting the zippy acid cut through cleanly. Try with charred pork chops or swordfish with brown-butter corn puree and a dollop of salsa Macha or Pan-seared chicken thighs with mushrooms and madeira butter.
