Maison Joseph Drouhin has been a respected name in Burgundy since 1880, with four generations of the family devoted to producing wines that reflect the character of their vineyards. The family's Chablis estate, Moulin de Vaudon, has a particular place in their history. Réserve de Vaudon celebrates this northern Burgundian heritage, delivering the purity, freshness and mineral character that make Chablis so appealing.
Made entirely from Chardonnay, the wine draws its personality from Chablis' famous Kimmeridgian limestone and clay soils, rich in ancient marine fossils. Drouhin favours a restrained approach that allows the fruit and vineyard character to take centre stage. The 2025 is a lively, elegant expression of the appellation, with bright citrus fruit and a distinctly refreshing personality.
Pale straw yellow with delicate green reflections. Fresh lemon, crisp green apple and white peach mingle with citrus blossom, crushed oyster shell and a hint of fresh almond. The palate is bright and finely textured, with juicy orchard fruit, mouthwatering acidity and a lovely chalky character. A touch of sea spray and lemon peel lingers through a clean, beautifully dry finish.
Try it with freshly shucked oysters, grilled garfish with parsley and lemon, or Japanese soba noodles with crispy vegetable tempura. Its freshness also makes it a lovely partner for steamed mussels with fennel and white wine.
Cellaring: Drink now to 2031. Particularly appealing for its youthful citrus fruit, with the freshness to develop gently over the next few years.
