Lively, refined and lightly textured with lemon zest, nectarine, light flint and spice
The latest vintage of Mountadam’s High Eden Chardonnay opens with lively aromas of lemon zest and white fleshed stone fruit, with touches of flint and spicy notes adding intrigue. The palate is lightly textured, with emphasis on the precise and refined cool-climate fruit.
This has early spring-like energy on release that would pair well with grilled garlic prawns with grilled lemon and a parsley-almond picada.
More about this wine
Mountadam’s High Eden wines are parcel selections of estate grown fruit.
The 2025 season was warm and dry across the Barossa, but the elevation of High Eden provided the vines nighttime relief. The fruit was harvested in two nighttime picks with a selective destemming harvester and is predominantly from the estate’s 37-year-old vines in the Western High Eden Block 69 sitting at an elevation of 550m above sea level.
Pressed on arrival to the winery, the juice was settled for 24 hours before it was racked off heavy solids for fermentation, half of which took place in seasoned oak puncheons, followed by a nine-month rest on lees with regular stirring. The other half fermented in stainless steel and matured for the same duration in seasoned, large 2500L oak foudres. The blended wine was stabilised and filtered ahead of bottling.
