High up in Bannockburn, where schist soils and fierce diurnal shifts shape some of Central Otago’s most characterful wines, Mt Difficulty has been quietly refining its style since the early 1990s. The winery sits among a collective of pioneering growers who saw potential in this rugged landscape long before it became one of New Zealand’s most exciting regions. Today, the team continues to focus on site expression, with fruit drawn from some of Bannockburn’s warmest terraces, balanced by altitude and cool nights that preserve freshness.
The 2025 Sauvignon Blanc leans more toward texture and detail than the overt punch of Marlborough. There is plenty of aromatic lift, think lime zest, white peach and passionfruit, but it is layered with something more savoury and mineral. Fresh herbs, a hint of fennel and a subtle flinty edge give it a sense of place, while a gentle weight through the mid palate adds depth. The acidity is bright and precise, carrying the wine to a long, clean finish that feels both refreshing and quietly complex.
This is made for food that has a bit of personality. Think freshly caught snapper with a squeeze of citrus and a scatter of herbs, or grilled prawns with chilli and garlic. It is also right at home with Vietnamese dishes like lemongrass chicken or a green papaya salad, where the wine’s lift and texture play beautifully with spice, crunch and aromatics.
Enjoy it now while the fruit is vibrant, or hold for a few years as those mineral and savoury notes build further complexity.
