Paringa Estate Pinot Gris from the Mornington Peninsula is a refined and textural white wine that beautifully expresses the cool, maritime climate of this southern Victorian region. The fruit is grown on north-facing slopes of volcanic red basalt soils that absorb warmth and enhance ripening while retaining natural acidity. The grapes are hand picked at perfect maturity and gently whole bunch pressed. Fermentation takes place partly in stainless steel to preserve brightness and partly in seasoned French oak to build texture and aromatic depth. Lees stirring over several months adds roundness and subtle savoury complexity, creating a wine of real dimension and harmony.
In the glass it shows pale straw with hints of gold. The aroma is lifted and elegant, offering pear, white peach and apple blossom alongside notes of spice, almond and wet stone.
