The fruit comes from the estate’s Red Hill South vineyard, where the north-facing slopes and rich red basalt soils promote slow ripening and vibrant acidity. The cool breezes from Western Port Bay preserve delicacy and lift, allowing the Riesling to develop its characteristic perfume and tension. Grapes are hand picked and gently pressed, with fermentation in stainless steel at cool temperatures to capture the purest possible fruit expression. A short period on fine lees adds texture and subtle savoury depth.
