Poole’s Rock is a Hunter Valley-based label of family-owned Agnew wines who also operate Audrey Wilknison vineyards. Fruit is sourced from several estate vineyards, including the historic Post Office and Soldier Settlers vineyards, as well as from trusted growers across the broader Hunter Valley.
Xanthe Hatcher has been the group’s chief winemaker since June 2019. The grapes for this wine were sourced from select vineyards in the Hunter Valley. The fruit was handpicked in early January, whole bunch pressed and cold settled over 2 days. The clean juice was racked clean and fermented at a cool temperature for 15 days with a neutral yeast to promote fruit flavours. The wine was racked off lees, and lightly fined with skim milk, before being filtered and bottled early to retain freshness.
