This is wonderfully useful at the table: freshly shucked oysters, grilled prawns with garlic and lemon, crab sandwiches, sushi, goat’s cheese tart or a generous bowl of moules marinières with crusty bread for mopping up the juices.
An abundance of classic Chablis elements that include iodine, sea breeze, lemon rind and a whiff of wood influence. The rich and delicious flavors possess a bit more volume with equally good intensity that also infuses the dry, youthfully austere and more complex finale.
88-91 points Allen Meadows for Burghound
Domaine Séguinot-Bordet is one of Chablis’ historic family estates, with the family’s roots in the region stretching back to the late 1500s. Today Jean-François Bordet continues that extraordinary lineage from Maligny, crafting expressive wines that capture the cool, mineral personality of northern Burgundy. The straight Chablis is a terrific introduction to the domaine — a step up in depth from Petit Chablis while retaining all the brightness and easy drinking charm.
The 2025 vintage brings youthful energy, fragrant fruit and plenty of freshness. Here the vines encounter Chablis’ famous Kimmeridgian soils, a mix of limestone and fossil-rich marl laid down by an ancient sea. It’s this remarkable terroir that helps give the wine its familiar combination of citrus, chalk and subtle salinity.
Pale straw with green highlights, the nose opens with lemon zest, green apple and white peach alongside citrus blossom and oyster shell. With air come hints of grapefruit, fresh almond and wet chalk. The palate is bright and beautifully shaped, with crunchy orchard fruit and citrus carried by lively acidity. A subtle chalky texture builds through the middle before a clean, mouthwatering finish of lemon peel, green apple and sea spray.
