The first of the 2025 vintage, bottled from the notably dry growing season. A very elegant and sincere expression of sauvignon blanc abounds from the glass, with aromas of delicate white florals, wafts of honeysuckle, morning dew atop blades of grass, the freshness clear and abundant. A little lychee and pineapple, too. Indeed, a bit going on. The palate drives a long line of citrus, grapefruit and finger lime right through to the ends. This is sauvignon blanc for sunshine sipping.

Sidewood has become one of the Adelaide Hills’ most reliable names for crisp, expressive whites, built on estate vineyards that sit high enough to capture cool nights and long, even ripening. Founded by Owen Inglis and now guided by winemaker Dylan Lee, the focus is firmly on purity and precision, letting the Hills’ natural freshness do the heavy lifting.

This Sauvignon Blanc leans into that cooler climate style. Aromatics are bright and lifted, lime, lemon zest and green apple, with a gentle herbal edge, fresh cut grass and a touch of nettle, kept nicely in check. There is also a faint tropical note, passionfruit and guava, but it stays subtle rather than overt.

The palate is clean and energetic, driven by crisp acidity that gives it a refreshing, mouth watering feel. Citrus and orchard fruit carry through with clarity, finishing dry with a lightly mineral edge that keeps it sharp and focused. It is all about balance, freshness and easy drinkability.

Winemaking is handled with a light touch, stainless steel fermentation preserving those bright aromatics, with minimal intervention to keep the wine vibrant and precise.

This is a natural partner for fresh, clean flavours. Oysters, prawns, goat’s cheese salads or simple grilled fish all work beautifully, and it also pairs well with herb driven dishes where that subtle green edge can shine.
