Bright, green-tinged yellow hues. Swirling, delicate spring flower scents mix with white peach, melon, lemon citrus, grapefruit, quince and almond. Cuts a bright figure in the glass, crisp, with an almost lemon-juicy acidity and building in texture. Finishes firm and nicely grippy.

Light-mid yellow, bright; there are waxy aromas, dried flowers and a whiff of honey. The wine is very dry, savoury, light and easy drinking. There's an earthy/mineral slant to it, too. Good food wine. Drink 2026–2031.

Tar and Roses has always had a knack for Italian varieties in Australian soils, and Fiano is a natural fit. Founded by Don Lewis and Narelle King, the winery draws on decades of experience, particularly Don’s time shaping iconic Australian wines, while focusing on varieties that thrive in warm climates yet hold onto freshness. Sourced from Victorian vineyards where sunshine is plentiful but nights can cool, this Fiano leans into texture and character rather than simple fruitiness.

The 2025 vintage is bright and expressive. Aromatics open with pear and nashi, layered with lemon zest and a gentle hint of mandarin. There is a distinctive savoury edge too, almond skin, a touch of spice and a faint herbal note that gives the wine its personality.

On the palate it is medium bodied with a softly textured feel, Fiano’s hallmark. Acidity is moderate but well placed, giving enough lift to keep things fresh while allowing the fruit and savoury notes to carry through. Flavours move from orchard fruit into a lightly nutty, gently saline finish that lingers.

Winemaking is handled with a focus on preserving varietal character, minimal oak if any, allowing that natural texture and savoury edge to come through clearly.

This is a versatile partner at the table. Grilled prawns, calamari, or a simple pasta with olive oil, garlic and herbs all work beautifully. It also pairs well with roast chicken, pork dishes or Mediterranean style vegetables.

Best enjoyed young while its freshness and texture are at their peak, offering a delicious and slightly different white for those looking beyond the usual varieties.
