Ricky Evans has been one of the most influential young voices in Tasmanian wine since starting Two Tonne Tasmania in 2013 with a single Pinot Noir. He now offers a range of small-batch sub-regional wines that shine a light on the meticulously tended vineyards of trusted growers across the island, as well as on the vineyards he manages himself in Tamar Valley. His style is flavoursome and generous, but above all the aim is for a pure expression of each variety and vineyard.
The STH Pinot Noir is Ricky’s regional interpretation of a given vintage across southern Tasmania’s Coal, Derwent and Huon Valleys, each picked and processed at the optimal time and contributing roughly equal parts to the wine.
The 2025 vintage was warm and dry across Tasmania, and all regions were spared from extreme heat days. After good fruit set during the warm spring, nature provided growers with generous crops, with concentrated flavours and excellent natural acidity across all varieties.
Ricky’s STH style favours early picked fruit and small (around 10%) amounts of whole bunches in the ferment. New oak is used sparingly for the eleven-month maturation that builds texture and shape in the wine.
Elegant and perfumed, the wine opens with generous ripe strawberry and cherry aromas that mingle with savoury, earthy notes of dried meats, mushrooms and rich broth. Medium bodied, but with plushness and a bit of grunt from a favourable warm vintage. Harmonious ripe fruit floods the savoury palate that is supported by powdery tannins.
This is a lovely regional expression of Pinot Noir that drinks well on release but will develop complexity over many years. Open to enjoy with Sichuan dry-fried green beans, tuna tataki or pork tonkatsu.
