Cold soak for 4 days, hand plunged in 1 tonne open fermenters and open top barrels. 5% whole bunch. Aged 18 months in hogsheads with 33% new French oak.
The wine displays enticing aromas of raspberry, red and black cherry, blackberry, mulberry and a hint of black pepper, with smoky vanilla and mocha notes derived from the oak. A concentrated palate packed with flavours of cherry, chocolate, a mix of wild berries along with cinnamon is complemented by fine structuring tannins, ensuring a long cellaring life.
Hand-picked, 4-day cold soak in 1t open fermenters and open top barrels with various times on skins, matured for 18 months in hogsheads (33% new). Unusually powerful in Margaret River terms, yet is no more than medium-bodied thanks to its silk and velvet texture; very long finish.
