Medium straw colour with a biscuity, lightly toasty, characterful and classic bouquet with dried flower traces. The wine is full and rich in the mouth with plenty of body and volume of flavour, the finish dry and balanced and seamlessly long. A complex, satisfying glass of champagne: lively acidity really drives the palate. 30 Aug 2025

Jacquart Mosaïque Brut is a vibrant, modern Champagne made in Reims by Champagne Jacquart, a house that has quietly built a reputation for producing elegant, terroir-focused wines with a contemporary edge. Founded in 1964 as a cooperative of visionary growers, Jacquart now draws fruit from more than 60 crus across Champagne, giving the Mosaïque Brut its name and its hallmark complexity. This wine is crafted predominantly from Chardonnay, which gives the blend its lift and finesse, supported by Pinot Noir for structure and Pinot Meunier for roundness and fruit. A generous proportion of reserve wines, typically around 30 to 40 percent, is included to add depth, consistency and subtle maturity.

The base wines come from vineyards spread across the Montagne de Reims, Vallée de la Marne and Côte des Blancs. Chalk soils dominate, particularly in the Chardonnay-rich sites, imparting a mineral backbone and delicate precision. The blend undergoes a long second fermentation and extended lees ageing of around three years, significantly longer than the appellation minimum, which adds creamy texture, brioche complexity and fine mousse. Dosage is kept in the brut range, typically around 9 g/L, to balance freshness and fruit without masking the wine’s mineral clarity.

In the glass, Jacquart Mosaïque Brut gleams pale gold with a fine, persistent bead. The nose is bright and elegant, opening with green apple, lemon zest and white peach, followed by notes of acacia blossom, freshly baked brioche and a touch of hazelnut from lees ageing. The palate is lively and refined, with crisp orchard fruits and citrus leading into a creamy mid-palate and a clean, chalky finish that reflects its Chardonnay backbone. The texture is both refreshing and polished, making it a classic aperitif style with real depth.

This Champagne is extremely versatile. It’s perfect with oysters, smoked salmon blinis, tempura prawns or a simple platter of gougères. It also pairs beautifully with light chicken dishes, grilled white fish, sushi, or a creamy mushroom risotto. Thanks to its balance of freshness and subtle richness, it’s equally at home on its own as a celebratory glass. While intended for immediate enjoyment, it can develop a touch more complexity over three to five years in the cellar.
