Whole bunches of hand-picked fruit are gently pressed to ensure delicate flavours. After primary ferment the wine is tiraged with no malolactic fermentation and disgorged after 18 months on yeast lees to retain crisp, fresh flavours. Colour incorporated during disgorging with pinot noir table wine.
Pinot noir has long been the darling of the magnificent Chromy vineyard at the top of the Tamar, and no surprise that this cuvée is now entirely pinot noir. A pretty, medium salmon hue heralds an eloquently fruity style, true to the variety and the site. Jeremy Dineen’s ascending skill in sparkling craftsmanship is on display in this pristine and expressive style, set off with a classy new label.
