From the cool slopes of Bloody Hill comes a Merlot that defies expectations and has quietly earned cult status among followers of Timo Mayer’s wines. Best known for Pinot Noir and Syrah, Mayer approaches Merlot with the same minimal intervention philosophy, whole bunch inclusion and hands on vineyard work that define his style. The Yarra Valley’s cool climate allows Merlot to retain aromatic lift and fine tannin structure rather than heavy sweetness. Produced in small quantities and tightly allocated, this release regularly sells out quickly, reinforcing its reputation among collectors who appreciate character driven wines.

In the glass the colour is deep crimson with bright ruby flashes. The aromatics are lifted and savoury, revealing plum, red cherry and blackberry layered with dried herbs, bay leaf and a subtle floral edge. Whole bunch fermentation brings a gentle spice and stem complexity that adds freshness and tension.

The palate is medium bodied and energetic rather than dense. Dark and red fruits sit at the core, framed by fine, chalky tannins and vibrant natural acidity. Notes of graphite, tobacco leaf and gentle oak weave through the mid palate, giving depth without heaviness. The finish is long, savoury and structured, showing Merlot with clarity and cool climate precision.

Pair with roast lamb, char grilled steak, mushroom and lentil dishes or duck with plum sauce. It is compelling in its youth for its vibrancy and aromatic lift, yet will cellar comfortably for ten to fifteen years, developing earthy, leafy complexity while retaining its structure.
