Castello Romitorio RomiToro Rosso IGT from Tuscany is a bold, modern Tuscan red that blends tradition with flair. Made by artist and winemaker Sandro Chia and his son Filippo at their Montalcino estate, RomiToro is a Super Tuscan-style wine that combines warmth, structure and character in a deliciously approachable package.
A blend of Syrah and Petit Verdot, RomiToro steps outside the DOCG rules to create something expressive and unconventional. The Syrah brings dark fruit, spice and supple texture, while the Petit Verdot contributes colour, power and a graphite-tinged backbone. Aged in oak for about 12 months, the wine shows real polish without losing its Tuscan soul.
Expect aromas of blackberry, plum, lavender, black pepper and a flicker of wild herbs. The palate is rich and smooth, with fine tannins and balanced acidity. It’s full-bodied but not heavy, finishing with a savoury twist and a lingering echo of dark cherry and spice.
Perfect with grilled steak, slow-cooked lamb, or eggplant parmigiana. It’s also versatile enough for pizza night, especially with sausage and mushrooms. While drinking beautifully now, it will develop more nuance over the next 5 to 7 years.
