From the cool, river influenced slopes of the Derwent Valley comes a late disgorged sparkling wine that showcases Tasmania’s world class potential for traditional method wines. Stefano Lubiana Wines was established in 1990 by Stefano and Monique Lubiana, becoming a pioneer of biodynamic viticulture in Australia. Today the estate is run by the next generation, with a continued focus on certified biodynamic farming, low yields and meticulous attention to detail. The Derwent Valley’s long growing season, low disease pressure and pristine environment create ideal conditions for Chardonnay and Pinot Noir destined for premium sparkling production. Extended time on lees before disgorgement brings depth, texture and remarkable complexity to this Brut.
The colour is pale gold with a fine, persistent bead that rises elegantly through the glass. Aromas are layered and refined, revealing lemon zest, green apple and white peach intertwined with brioche, toasted almond and subtle honeyed notes from extended lees ageing. A delicate saline lift hints at the cool Tasmanian climate.
On the palate it is precise and beautifully structured, combining bright citrus and orchard fruit with creamy texture and fine mousse. The long lees maturation delivers depth and savoury complexity, while vibrant natural acidity keeps the wine fresh and focused. The finish is dry, mineral and persistent, carrying notes of lemon curd, hazelnut and subtle toast.
Serve as an aperitif or alongside oysters, lobster, tempura prawns or roast chicken with tarragon. While ready to enjoy now for its developed complexity, it will continue to evolve gracefully for five to ten years, gaining further nutty and brioche nuances.
